
Spiced Raisin Oatmeal Cookie
The softest, moistest oatmeal cookie loaded with spices and chopped raisins.
Ingredients
- 1 cup flour
- 1/2 tsp ground cinnamon
- 1/2 tsp cloves
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups slightly blended or chopped oats
- 1/2 cup softened butter
- 1/2 cup packed brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1 cup chopped raisins
Instructions
- Pre heat oven to 350 C and line or grease cookie sheet
- Lightly blend or chop oatmeal (just blend until the oats are broken down a little, not into flour)
- Mix all the dry ingredient together in bowl including the oatmeal
- Blend or chop the raisins just enough to break them up into smaller bits, do not over blend or will turn into one big sticky ball, set aside
- Blend butter, egg, sugars and vanilla together until well combined and fluffy
- Combine the dry mixture to the wet mixture until almost completely combined then add the chopped raisins, mix well and form a dough ball
- Let chill in fridge for at least 5 minutes (15 is best) before baking
- Place cookie ball on baking sheet and press down slightly and sprinkle with oats
- Bake for 12 – 14 minutes or until golden on the edges, enjoy!
