Spiced Raisin Oatmeal Cookie

The softest, moistest oatmeal cookie loaded with spices and chopped raisins.

Ingredients
  

  • 1 cup flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups slightly blended or chopped oats
  • 1/2 cup softened butter
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup chopped raisins

Instructions
 

  • Pre heat oven to 350 C and line or grease cookie sheet
  • Lightly blend or chop oatmeal (just blend until the oats are broken down a little, not into flour)
  • Mix all the dry ingredient together in bowl including the oatmeal
  • Blend or chop the raisins just enough to break them up into smaller bits, do not over blend or will turn into one big sticky ball, set aside
  • Blend butter, egg, sugars and vanilla together until well combined and fluffy
  • Combine the dry mixture to the wet mixture until almost completely combined then add the chopped raisins, mix well and form a dough ball
  • Let chill in fridge for at least 5 minutes (15 is best) before baking
  • Place cookie ball on baking sheet and press down slightly and sprinkle with oats
  • Bake for 12 – 14 minutes or until golden on the edges, enjoy!
