Papa’s Parmesan Toast

A perfect Rye toast topped with Parmesan, onion and a kick of dijon spice!

  • 1/2 cup mayonnaise
  • 1/2 cup grated parmesan cheese
  • 2 tbs grated purple onion *any onion will work
  • 2 tsp dijon mustard
  • 4 slices Marble Rye *Rye or any type of bread will work
  • salt & pepper
  • 2 tbsp butter *optional


  • Preheat the oven to broil 500C
  • Butter the top of each slice of bread and lay them on a baking sheet with a little space in between each slice
  • Combine all the ingredients together in a small bowl and mix well
  • Spread mixture over slices of bread evenly
  • Broil until golden brown for about 2 minutes


  • Use any type of bread at any thickness
  • Skip the onion if you don’t like it
  • Skip the butter, it will still turn out nice
  • Add grated asiago for more flavour
  • Season it up with whatever you like!
