Garlic Parsley Potatoes

Easy elevated potato dish with parsley, garlic and chicken broth to give it substantial flavour!
Course Main Course, Side Dish

Equipment

  • 1 large skillet
  • 1 large bowl of water

Ingredients
  

  • 10 – 12 small potatoes red, yellow and Yukon work the best
  • 1 tbs butter
  • 1 tbs olive oil
  • 1 medium chopped onion
  • 3 crushed garlic cloves
  • 1 cup chicken broth beef, vegetable or water will work as well
  • 1 cup fresh chopped parsley, divided save 1/4 cup for garnish
  • salt & pepper

Instructions
 

  • Peel the skin from around the middle of each potato. Leave the skin on either end and place in cold water, set aside
  • Melt butter in the skillet over medium heat and add olive oil
  • Sauté onion and garlic until tender for about 5 minutes
  • Pour in the chicken broth and 3/4 cup chopped parsley. Mix well and cook until you see small bubbles
  • Place potatoes in a single layer in the skillet. Return to a bubble and reduce heat to a low simmer and cover for 10 minutes to until each potato is tender
  • Remove from heat, add pepper and serve potatoes with the parsley garlic butter sauce that is left in the pan. Garnish with parsley, enjoy!
    *Pour into serving bowl and garnish with parsley for family style dinner.
