
Garlic Parsley Potatoes
Easy elevated potato dish with parsley, garlic and chicken broth to give it substantial flavour!
Equipment
- 1 large skillet
- 1 large bowl of water
Ingredients
- 10 – 12 small potatoes red, yellow and Yukon work the best
- 1 tbs butter
- 1 tbs olive oil
- 1 medium chopped onion
- 3 crushed garlic cloves
- 1 cup chicken broth beef, vegetable or water will work as well
- 1 cup fresh chopped parsley, divided save 1/4 cup for garnish
- salt & pepper
Instructions
- Peel the skin from around the middle of each potato. Leave the skin on either end and place in cold water, set aside
- Melt butter in the skillet over medium heat and add olive oil
- Sauté onion and garlic until tender for about 5 minutes
- Pour in the chicken broth and 3/4 cup chopped parsley. Mix well and cook until you see small bubbles
- Place potatoes in a single layer in the skillet. Return to a bubble and reduce heat to a low simmer and cover for 10 minutes to until each potato is tender
- Remove from heat, add pepper and serve potatoes with the parsley garlic butter sauce that is left in the pan. Garnish with parsley, enjoy!*Pour into serving bowl and garnish with parsley for family style dinner.
